Summery chicken stir fry

This is my own recipe. It is really easy to make. It takes 30 minutes to prepare and 55 minutes to cook. The ingredients I used are:

  • 450g chicken breast, diced and marinated for 30 minutes in 2tbsp dark soy sauce, 1 tbsp ginger-garlic paste and black sesame seeds

  • 2 Pak Choi, chopped

  • 1 onion, diced

  • 1 red pepper, diced

  • Handful of fresh coriander

  • 2 green chillies, chopped

  • 4 tbsp vegetable oil

  • Salt

Method:

  1. Add 2tbsp vegetable oil to a pan on medium heat and toss the onions in. Let it cook for 15 minutes.

  2. Add the red pepper in, mix and let it cook for 5 minutes.

  3. Toss the Pak Choi in and let it cook for 10 minutes. Then transfer to a different bowl.

  4. Using the same pan, add 2 tbsp vegetable oil and toss the chicken in. Put the lid on and let it cook for 15 minutes, stirring occasionally.

  5. Add the chillies and coriander, season with salt, stir, put the lid back on and let it cook for another 5 minutes until the chicken is tender.

  6. Toss the cooked vegetables in, mix well, put the lid on and let it cook for 5 minutes.

  7. Serve a generous portion and relish with a fresh salad. Bon appétit!
