Salmon curry

This is my own recipe. It is really easy to make. It takes 15 minutes to prepare and 40 minutes to cook. The ingredients I used are:

  • 250g salmon fillet, cut into cubes

  • 1 onion, diced

  • 2 tomatoes, roughly chopped

  • 3 garlic cloves, finely chopped

  • 3 green chillies

  • 2 bay leaves

  • 1 tsp red chilli powder

  • 1 tbsp cumin seeds

  • 2 tbsp garam masala

  • 300ml water

  • 4 tbsp vegetable oil

  • Salt

  • Handful of fresh coriander

Method:

  1. Add 2 tbsp vegetable oil to a large saucepan on medium heat followed by the onions. Let it cook for 10 minutes.

  2. Toss the garlic in and let it cook for 2 minutes before adding the bay leaves, cumin seeds, red chilli powder and garam masala. Mix well.

  3. Add the tomatoes and green chillies in and mix altogether.

  4. Pour the 300ml water into the pan, mix well, season with salt and put the lid on. Let it cook for 20 minutes, stirring occasionally.

  5. While the sauce is cooking, add 2 tbsp vegetable oil to a frying pan on medium heat and toss the salmon fillets in. Let them cook until golden and crispy.

  6. Back to the sauce, once the tomatoes have softened, discard the bay leaves, transfer the sauce to a blender and blitz until smooth.

  7. Pour the sauce back into the saucepan and toss the salmon in, gently mixing it all. Let it cook for 5 minutes.

  8. Serve a generous portion and garnish with fresh coriander. Bon appétit!
