Cauliflower curry

This is my own recipe. It is really easy to make. It takes 15 minutes to prepare and 1 hour to cook. The ingredients I used are:

  • 1 cauliflower, cut into florets

  • 1 onion, sliced

  • Thumb size fresh ginger, chopped

  • 3 garlic cloves, finely chopped

  • 3 green chillies, halved

  • 3 tomatoes, chopped

  • 1 tbsp ground cumin

  • 1 tbsp ground turmeric

  • 1 tbsp red chilli powder

  • 1 tsp cumin seeds

  • Handful of green cardamoms

  • 2 tbsp vegetable oil

  • 500ml water

  • Salt

  • Fresh coriander

Method:

  • Add the vegetable oil to a large saucepan pan on medium heat followed by the onions. Let it cook for 10 minutes.

  • Add the garlic in and let it cook for 2 minutes before adding the ginger. Mix well and let it cook for 3 minutes.

  • Add the chopped tomatoes and green chillies. Season with salt, add a splash of water and let it cook for 15 minutes.

  • Toss the green cardamoms, ground cumin, cumin seeds, turmeric and red chilli powder in. Pour 200ml water and mix well. Let it cook for 1-2 minutes.

  • Add the cauliflower in and pour the remaining water into the pan. Mix well, put the lid on and let cook for 30 minutes.

  • Serve a generous portion and garnish with fresh coriander. It pairs really well with naan. Enjoy!
