Cauliflower curry
This is my own recipe. It is really easy to make. It takes 15 minutes to prepare and 1 hour to cook. The ingredients I used are:
1 cauliflower, cut into florets
1 onion, sliced
Thumb size fresh ginger, chopped
3 garlic cloves, finely chopped
3 green chillies, halved
3 tomatoes, chopped
1 tbsp ground cumin
1 tbsp ground turmeric
1 tbsp red chilli powder
1 tsp cumin seeds
Handful of green cardamoms
2 tbsp vegetable oil
500ml water
Salt
Fresh coriander
Method:
Add the vegetable oil to a large saucepan pan on medium heat followed by the onions. Let it cook for 10 minutes.
Add the garlic in and let it cook for 2 minutes before adding the ginger. Mix well and let it cook for 3 minutes.
Add the chopped tomatoes and green chillies. Season with salt, add a splash of water and let it cook for 15 minutes.
Toss the green cardamoms, ground cumin, cumin seeds, turmeric and red chilli powder in. Pour 200ml water and mix well. Let it cook for 1-2 minutes.
Add the cauliflower in and pour the remaining water into the pan. Mix well, put the lid on and let cook for 30 minutes.
Serve a generous portion and garnish with fresh coriander. It pairs really well with naan. Enjoy!
