Shredded brussels sprouts, citrus and avocado salad

I was inspired by How Sweet Eats’ recipe. The sweet and tangy flavours blend in really well making this a great and filling lunch. It is quick and easy to make.

It takes 5 minutes to prepare and 10 minutes to cook. The ingredients I used are:

  • 100g brussels sprouts

  • 2 garlic cloves

  • 1 orange

  • 1 avocado

  • 2 tbsp orange juice

  • 1 tbsp mix of red and black currants

I started by thinly chopping the garlic and the brussels sprouts. I cut both the orange and avocado in thin slices.

I then poured 1 tbsp olive oil in a frying pan on medium heat. I tossed the brussels sprouts in and sprinkled some salt to taste. I let it cook for 1 minute and then added the garlic cloves. I stirred it all and let it cook until the brussels sprouts softened. I then removed the pan from the heat.

I proceeded by transferring the cooked brussels sprouts in a bowl. I then drizzled the 2 tbsp orange juice all over and then tossed in the orange and avocado slices. Finally, I sprinkled the 1 tbsp mix of red and black currants all over. Voilà!
