Avocado and scrambled eggs on toast

This dish is quick and easy to make. It takes 5 minutes to prepare and 5 minutes to cook.

The ingredients I used are:

  • 2 slices of bread, toasted

  • 1 avocado

  • 2 medium eggs

  • 1 tbsp milk

  • Salt

  • Ground black pepper

  • Dill

I started by halving the avocado. I sliced half of it and mashed the other half. I then whisked the 2 eggs and added 1 tbsp milk and salt to taste to the mixture.

I poured the eggs in a non-stick frying pan on medium heat and let it cook for 30 seconds. I then swirled everything until the eggs were fluffy. I removed the pan from the heat and set it aside.

I drizzled some olive oil on 1 slice of bread and placed the sliced avocado on top. I drizzled some more olive oil all over the avocado, sprinkled black pepper and garnished with dill. I spread the mashed avocado on the other slice of bread first, followed by the scrambled eggs. Finally I sprinkled black pepper all over. Enjoy!
