Seafood noodles soup
This dish is quick and easy to make. It’s my own recipe. It takes 5 minutes to prepare and 20 minutes to cook. The ingredients I used are:
250g mussels, marinated in garlic butter
150g chilli and lime king prawns, ready to eat
150g medium egg noodles
400ml vegetable stock
1 large egg, boiled and peeled
15g fresh finger, cut into 1cm long matchsticks
40g spring onion, finely chopped
3 red chillies, thinly sliced
2 tbsp chilli flakes
Salt
Black pepper
Method:
Add the vegetable stock to a large saucepan on medium heat, and let it boil for 1 minute.
Gently add the mussels to the pan and put the lid on. Let it simmer until mussels start to open.
Add the noodles, spring onion, ginger and chillies to the pan and stir. Season with salt to taste and let it cook for 5 minutes.
Sprinkle the chilli flakes and black pepper, and stir thoroughly.
Halve the boiled egg and toss it together with the prawns to the pan. Let it cook for another minute before removing from the heat.
Serve with hot sauce or crushed chillies. Bon appétit!
