Seafood noodles soup

This dish is quick and easy to make. It’s my own recipe. It takes 5 minutes to prepare and 20 minutes to cook. The ingredients I used are:

  • 250g mussels, marinated in garlic butter

  • 150g chilli and lime king prawns, ready to eat

  • 150g medium egg noodles

  • 400ml vegetable stock

  • 1 large egg, boiled and peeled

  • 15g fresh finger, cut into 1cm long matchsticks

  • 40g spring onion, finely chopped

  • 3 red chillies, thinly sliced

  • 2 tbsp chilli flakes

  • Salt

  • Black pepper

Method:

  • Add the vegetable stock to a large saucepan on medium heat, and let it boil for 1 minute.

  • Gently add the mussels to the pan and put the lid on. Let it simmer until mussels start to open.

  • Add the noodles, spring onion, ginger and chillies to the pan and stir. Season with salt to taste and let it cook for 5 minutes.

  • Sprinkle the chilli flakes and black pepper, and stir thoroughly.

  • Halve the boiled egg and toss it together with the prawns to the pan. Let it cook for another minute before removing from the heat.

  • Serve with hot sauce or crushed chillies. Bon appétit!
