Sausage fried rice

This is my own recipe. It is really easy to make. It takes 20 minutes to prepare and 40 minutes to cook. The ingredients I used are:

  • 400g rice, cooked

  • 3 medium carrots, diced

  • 250g green peas

  • 200g chicken sausage, cooked and sliced

  • 1 onion, finely chopped

  • 2 garlic cloves, finely chopped

  • 2 green chillies

  • 2 tbsp vegetable oil

  • 1 tbsp cumin seeds

  • 1 tsp red chilli powder

  • 1 tsp ginger paste

  • 2 tbsp soy sauce

  • Handful of fresh coriander, chopped

Method:

  1. Add 2 tbsp vegetable oil to a large pan on medium heat followed by the onions. Let it cook for 2-3 minutes before adding the garlic.

  2. Toss the cumin seeds, ginger paste, green chillies, red chilli powder and a splash of water. Mix it all and let it cook for 2 minutes.

  3. Add the carrots in and let it cook for 15 minutes.

  4. Add the green peas, mix and let it cook for 10 minutes.

  5. Toss the cooked sausage in the pan, mix and let it cook for 5 minutes.

  6. Transfer the cooked rice to the pan, add the soy sauce, mix it all together and let it cook for 5 minutes. Season with salt and add the chopped coriander in.

  7. Serve a generous portion and relish. Bon appétit!
