Chicken mine frite

This is my own recipe. It is easy to make, it takes 30 minutes to prepare and 1 hour to cook. The ingredients I used are:

  • 350g chicken breast, diced and marinated for 30 minutes in olive oil, thumb sized ginger crushed, 1 garlic clove finely chopped, 1 tbsp soy sauce, salt and pepper

  • 300g noodles, boiled

  • 100g cabbage, diced

  • 3 carrots, diced

  • 1 green pepper, diced

  • 1 Pak Choi, finely chopped

  • 2 green chillies, finely sliced

  • 3 tbsp vegetable oil

  • 3 tbsp soy sauce

  • Handful of spring onion

Method:

  1. Add 2 tbsp vegetable oil to a large pan on medium heat followed by the cabbage. Let it cook for 15 minutes.

  2. Add the carrots in and let it cook for 10 minutes.

  3. Toss the pepper and Pak Choi in and let it cook for 10 minutes, mixing thoroughly.

  4. Toss the chillies in and add 2 tbsp soy sauce. Let it cook for 5 minutes and set aside.

  5. In a separate pan, add 1 tbsp vegetable oil followed by the chicken and let it cook until tender.

  6. Mix the chicken with the vegetables and set aside.

  7. Using the same frying pan, toss the noodles in and add 1 tbsp soy sauce. Let it cook for 2 minutes before adding the vegetables in. Mix thoroughly and cook for 5 minutes.

  8. Serve a generous portion and garnish with spring onion. It pairs really well with vegetables dumplings. Bon appétit!
