Red kidney beans tacos

This is my own recipe. It is really easy and quick to make. It takes 5 minutes to prepare and 20 minutes to cook. The ingredients I used are:

  • 400g canned red kidney beans

  • 200g rice, cooked

  • 4 hard taco shells, oven cooked

  • 1 onion, finely diced

  • 2 tbsp vegetable oil

  • 100g grated cheese

Taco seasoning:

  • 2 tsp ground cumin

  • 1 tsp red chilli powder

  • 1 tsp garlic granules

  • 1 tsp black pepper

  • Salt to season

Salsa:

  • 3 tomatoes, diced

  • 2 green chillies

  • Handful of fresh coriander, chopped

  • Salt to season

Method:

  1. Add the vegetable oil to a pan on medium heat followed by the onions and let it cook for 5 minutes.

  2. Toss the red kidney beans in and let it cook for 10 minutes.

  3. Add the taco seasoning, mix well and let it cook for 2 minutes.

  4. Fill each taco shell with a little bit of rice, red kidney beans, salsa and cheese and enjoy. Bon appétit!
