Red kidney beans tacos
This is my own recipe. It is really easy and quick to make. It takes 5 minutes to prepare and 20 minutes to cook. The ingredients I used are:
400g canned red kidney beans
200g rice, cooked
4 hard taco shells, oven cooked
1 onion, finely diced
2 tbsp vegetable oil
100g grated cheese
Taco seasoning:
2 tsp ground cumin
1 tsp red chilli powder
1 tsp garlic granules
1 tsp black pepper
Salt to season
Salsa:
3 tomatoes, diced
2 green chillies
Handful of fresh coriander, chopped
Salt to season
Method:
Add the vegetable oil to a pan on medium heat followed by the onions and let it cook for 5 minutes.
Toss the red kidney beans in and let it cook for 10 minutes.
Add the taco seasoning, mix well and let it cook for 2 minutes.
Fill each taco shell with a little bit of rice, red kidney beans, salsa and cheese and enjoy. Bon appétit!
