Pan fried cod fillet with spicy peppery sauce

This is my own recipe. It is really easy and quick to make. It takes 10 minutes to prepare and 30 minutes to cook. The ingredients I used are:

  • 125g cod fillet

  • 1 onion, finely diced

  • 1 red pepper, chopped

  • 1 sweet red pepper, chopped

  • 3 green chillies, chopped

  • 2 garlic cloves

  • 1 tbsp red chilli powder

  • 2 tbsp vegetable oil

  • Salt

  • Coriander

Method:

  1. Add 1 tbsp vegetable oil to a pan on medium heat followed by the onions. Let it cook for 2 minutes before adding the garlic.

  2. Toss the peppers in and let it cook for 5 minutes.

  3. Add the green chillies and red chilli powder. Season with salt and stir well. Let it cook for a minute.

  4. Transfer to a blender and blitz until smooth. Add a splash of water if needed and set aside.

  5. Add 1 tbsp vegetable oil to the same pan and gently toss the cod fillet in. Pan fry for 14 minutes until golden.

  6. Serve the cod on a bed of rice and generously pour the sauce on top. Garnish with coriander and relish! Bon appétit!
