Ramen with vegetables

This is my own recipe. It is very quick and easy to make. It takes 10 minutes to prepare and 10 minutes to cook. The ingredients I used are:

  • 140g ramen noodles

  • Ramen seasoning and sauce from the packet

  • 75g red cabbage, chopped

  • 1 medium onion, chopped

  • 1 red pepper, chopped

  • 2 green chillies, chopped

  • 1 hard boiled egg, halved

  • 1 tbsp vegetable oil

  • White sesame seeds

  • Handful of spring onion, chopped

Sauce for the vegetables:

  • 2 tbsp dark soy sauce

  • 1 tbsp sesame oil

  • 2 tsp red chilli flakes

  • 1 tsp black sesame seeds

  • 1 tsp black pepper

Method:

  • Add 1 tbsp vegetable oil to a pan on medium heat and then add the onions. Let it cook for 45 seconds before adding the green chillies.

  • Add the cabbage, stir everything and let it cook for 1 minute before adding the red pepper.

  • In a bowl, mix all the ingredients for the vegetable sauce and add 1 tbsp of the sauce to the vegetables, mixing thoroughly. Lower the heat and let it cook for 2 minutes.

  • Add the ramen noodles to a saucepan with 120ml boiling water and let it cook until soft.

  • Transfer the cooked vegetables to the saucepan with the noodles and mix.

  • Add the ramen seasoning and sauce from the packet to the pan and mix altogether. Let it cook for another 30 seconds.

  • Serve with hard boiled egg and garnish with sesame seeds, spring onion and 1-2 tbsp of the vegetable sauce. Bon appétit!
