Ramen with vegetables
This is my own recipe. It is very quick and easy to make. It takes 10 minutes to prepare and 10 minutes to cook. The ingredients I used are:
140g ramen noodles
Ramen seasoning and sauce from the packet
75g red cabbage, chopped
1 medium onion, chopped
1 red pepper, chopped
2 green chillies, chopped
1 hard boiled egg, halved
1 tbsp vegetable oil
White sesame seeds
Handful of spring onion, chopped
Sauce for the vegetables:
2 tbsp dark soy sauce
1 tbsp sesame oil
2 tsp red chilli flakes
1 tsp black sesame seeds
1 tsp black pepper
Method:
Add 1 tbsp vegetable oil to a pan on medium heat and then add the onions. Let it cook for 45 seconds before adding the green chillies.
Add the cabbage, stir everything and let it cook for 1 minute before adding the red pepper.
In a bowl, mix all the ingredients for the vegetable sauce and add 1 tbsp of the sauce to the vegetables, mixing thoroughly. Lower the heat and let it cook for 2 minutes.
Add the ramen noodles to a saucepan with 120ml boiling water and let it cook until soft.
Transfer the cooked vegetables to the saucepan with the noodles and mix.
Add the ramen seasoning and sauce from the packet to the pan and mix altogether. Let it cook for another 30 seconds.
Serve with hard boiled egg and garnish with sesame seeds, spring onion and 1-2 tbsp of the vegetable sauce. Bon appétit!
