Salmon poke bowl
This dish is really quick and easy to make. I was inspired by BBC FOOD’s recipe. It takes 10 minutes to prepare and 15 minutes to cook. The ingredients I used are:
200g sushi rice, washed
2 salmon fillets
1 avocado, sliced
1/4 red cabbage, chopped
Handful of spring onion
Black sesame seeds
3 tbsp rice vinegar
Salt to season
Making the sauce:
1 tsp sesame oil
1 tbsp Mayo
1 tbsp sriracha sauce
1 tsp oyster sauce
3 tsp soy sauce
1/2 lemon juice
Black pepper
Method:
Add 350ml water to the sushi rice in a pan and let it boil for 10 mins until all the water has evaporated. Let the sushi rice cool down.
Once the sushi rice has cooled down, add 3 tbsp rice vinegar to it and mix thoroughly. Season with salt to taste.
Add 1 tbsp olive oil to a pan on medium heat, gently place the salmon fillets in the middle and let it cook until golden. Flip occasionally to let each side cook. Season with salt.
In a bowl, mix all the ingredients for the sauce and set aside.
Serve a generous portion of the sushi rice with the salmon fillets followed by the red cabbage, avocado, spring onion and sesame seed. Finally, top with the sauce and relish!
