Pan fried egg wrap with vegetables

This is my own recipe. It takes 5 minutes to prepare and 10 minutes to cook. The ingredients I used are:

  • 1 tortilla

  • 1 egg

  • 1 small onion, thinly chopped

  • 1 yellow pepper, chopped 

  • 2 green chillies, chopped 

  • 30g grated cheese 

  • 3 tbsp green pesto 

  • 2 tsp garlic powder

  • 1 tbsp vegetable oil

  • Salt 

  • Fresh coriander 

Method:

  1. Add 1 tbsp vegetable oil to a pan on medium heat. Add the onions in and let it cook for 1 minute.

  2. Add the pepper and chillies, mix and let it cook for 2 minutes.

  3. Make a well in the pan and crack the egg directly in that well with the vegetables around it. Let it cook for 2-3 minutes.

  4. Season with salt and garlic powder and let it cook for another 30 seconds.

  5. Cut a slit down the middle of the tortilla and spread the green pesto all over the tortilla. Toss some cheese on.

  6. Gently move the vegetables and egg to one side of the pan and place the tortilla in the pan. Add the cooked vegetables and egg on the top half, followed by the remaining cheese.

  7. Fold the wrap into quarters starting from the bottom right quarter over to the top right quarter then to the top left quarter and finally to the bottom left quarter. Let each side cook for 1-2 minutes until golden and crispy.

  8. Garnish with fresh coriander and serve with hot sauce. Bon appétit!
