Sambar with potato balls

I was inspired by the Nepalese dish Rildok. I’ve made a fusion between Nepalese and South Indian cuisines. This is my own recipe. It takes 15 minutes to prepare and 40 minutes to cook. The ingredients I used are:

  • 4 boiled potatoes

  • 750ml water

  • 2 medium carrots, diced

  • 1 onion, diced

  • 1 tomato, diced

  • 4 garlic cloves

  • 3 dried red chillies

  • 1 tbsp ground cumin

  • 1 tsp cumin seeds

  • 2 tbsp vegetable oil

  • 1 tbsp red chilli powder

  • 1 tbsp ground turmeric

  • Salt

  • Handful of fresh coriander, chopped

  • 3 green chillies, chopped

Method:

  1. Add 2 tbsp vegetable oil to a saucepan on medium heat followed by the onions and let it cook for 15 minutes.

  2. Toss the garlic cloves, red dried chillies, cumin seeds, ground cumin, salt and a dash of vegetable oil to a blend and blitz until a smooth paste is obtained. Add a little bit of water if needed and set aside.

  3. Add the tomatoes to the pan followed by the paste and mix thoroughly. Let it cook for 5 minutes.

  4. Add the carrots, ground turmeric and red chilli powder. Mix well and pour 750ml water into the saucepan. Season with salt, put the lid on and let it cook for 20 minutes.

  5. In the meantime, mash the boiled potatoes until a smooth texture is obtained. Add a handful of green chillies, coriander, 1 tsp red chilli powder and salt. Mix well and then make little balls.

  6. Gradually add the balls gently to the sambar and let it cook for 1 minute.

  7. Serve a generous portion and garnish with green chillies. Enjoy!
