Mushroom curry

This is my own recipe. It is really easy to make. It takes 15 minutes to prepare and 50 minutes to cook. The ingredients I used are:

  • 400g mushroom, cut into quarters and thoroughly washed

  • 1 large onion, finely chopped

  • 3 garlic cloves, chopped

  • 2 tbsp vegetable oil

  • 1 tsp ground turmeric

  • 1 tsp red chilli powder

  • 1 tsp ground cumin

  • 1 cinnamon stick

  • 4 black cardamoms

  • 3 bay leaves

  • 1 green chilli, halved

  • 4 tomatoes, chopped

  • 1 tsp crushed ginger

  • 1 tbsp tomato purée

  • Salt

  • Handful of fresh coriander

  • 200ml water

Method:

  1. Add the vegetable oil to a pan on medium heat followed by the onion. Let it cook for 5 minutes.

  2. Add the garlic in, let it cook for 30 seconds before adding the cumin, turmeric, chilli powder, bay leaves, black cardamoms and cinnamon stick in. Mix well and let it cook for 5 minutes.

  3. Toss the chopped tomatoes in followed by 100 ml water. Season with salt, put the lid on and let it cook for 15 minutes.

  4. Add the crushed ginger and tomato purée. Mix and let it cook for another 10 minutes, stirring occasionally.

  5. Toss the green chilli in followed by the mushrooms and let it cook for 15 minutes.

  6. Sprinkle the chopped coriander on top and stir. Let it cook for 1-2 minutes.

  7. Serve a generous portion and relish with rice. Bon appétit!
