Creamy chicken macaroni

This is my own recipe. It is really easy to make. It takes 15 minutes to prepare and 35 minutes to cook. The ingredients I used are:

  • 125g chicken, diced

  • 1 large onion, chopped

  • 3 garlic cloves, chopped

  • 2 green chillies, chopped

  • 400g canned plum tomatoes

  • 100ml water

  • 150ml double cream

  • 100g grated cheese

  • 200g cooked macaroni

  • 3 tbsp vegetable oil

  • Salt

  • Parsley

Method:

  1. Add 2 tbsp vegetable oil to a pan on high heat and toss the chicken in and let it cook for 15 minutes until golden. Transfer to a bowl and set aside.

  2. Add 1 tbsp vegetable oil to the same pan on medium heat now and add the onions in. Let it cook for 2 minutes before adding the garlic in. Let it sauté for 30 seconds .

  3. Add the chillies in and let it cook for 2 minutes before adding the plum tomatoes. Pour 100ml water to the pan and let it cook for 10 minutes.

  4. Transfer the sauce to a blender and blitz until smooth.

  5. Pour the sauce back into the pan, followed by the double cream and grated cheese. Stir thoroughly, season with salt and let it simmer for 1 minute.

  6. Add the cooked chicken and macaroni in and let it cook for 5 minutes stirring occasionally.

  7. Serve a generous portion and garnish with parsley and extra cheese. Enjoy!
