Green lentil burger with salted rosemary wedges
This is my own recipe. It is very filling and delicious.
It takes 15 minutes to prepare and 30 minutes to cook, including making the burger. This recipe yields 8 patties. The ingredients I used are:
250g green lentils
1 onion, diced
1 garlic clove, finely chopped
3 small potatoes, cut in cubes
2 tbsp hot paprika
1 tbsp dried rosemary
3 tbsp Jalapenos
100g breadcrumbs
3 eggs
Salt and pepper, to taste
Preparation:
Add the green lentils with 300ml water to a pan on medium heat.
Let it come to a boil until the lentils have softened.
Drain and transfer the cooked lentils to a bowl to cool down.
Making the burger filling:
Add 1 tbsp vegetable oil to a pan on medium heat.
Toss the chopped onion, garlic and potatoes in, stirring occasionally. Let it cook until potatoes are golden and soft.
Transfer the cooked ingredients to the bowl containing the lentils, and let the whole lot cool down for 5-10 minutes.
Add hot paprika, dried rosemary, Jalapenos, salt and pepper, and mix until everything is absorbed.
Add breadcrumbs and mix.
Break the eggs in the bowl and mix until everything starts to stick.
Take a portion about the size of the palm and using both hands, flatten and shape the mixture to look like a patty. Repeat with the remaining mixture.
Cooking the burger:
Add 1 tbsp vegetable oil to a pan on medium heat.
Gently place the burger in the pan and let it cook for 2-3 minutes on each side, until it looks golden and crisp.
Serve with salted rosemary wedges or any side of your preference.
