Gluten Free Gnocchi in a garlic butter sauce

This is my own recipe. It is very easy to make. It takes 30 minutes to prepare and 20 minutes to cook. The ingredients I used are:

  • 500g potatoes, peeled, boiled and mashed

  • 300g gluten free plain flour

  • 2 eggs

  • 200g butter

  • 1 tbsp olive oil

  • 4 garlic cloves, crushed

  • 2 tbsp crushed chilli flakes

  • Handful of fresh parsley, chopped

Making the gnocchi:

  1. Add the mashed potato to a bowl and gradually add 200g flour. Mix well.

  2. Add the two eggs in, mix well until sticky. Then add the remaining flour to combine everything. Knead well and let it rest for 10 minutes.

  3. Cut the dough into eight equal parts. Roll each part into a log and then cut the log into small pieces of about 2-3cm.

  4. Add water to a saucepan and let it come to a boil. Gently toss the pieces into the pan and let them cook for 3-4 minutes.

  5. Transfer to a bowl and set aside.

Garlic butter sauce:

  1. Toss 100g butter in a pan on medium heat, followed by the olive oil (to prevent the butter from burning).

  2. Add the crushed garlic in and let it cook for 2-3 minutes.

  3. Add the chilli flakes in followed by the gnocchi. Add the remaining butter and gently toss the pan. Let it cook for 2 minutes, stirring occasionally to ensure the gnocchi absorbs the sauce.

  4. Sprinkle the chopped parsley all over. Serve a generous portion and garnish with your favourite cheese. Enjoy!
