Gluten Free bread rolls stuffed with tandoori chicken

This is my own recipe. It takes 40 minutes to prepare and 45 minutes to cook. The ingredients I used are as follows.

Gluten free bread roll

Ingredients:

  • 100ml milk

  • 7g yeast

  • 500g gluten free plain flour

  • 4 tbsp tapioca starch (potato starch can also be used as an alternative)

  • 75ml hot water

  • 1 tsp salt

  • 30g butter

  • 1 tbsp yogurt

  • 1 egg (to be used later)

Making the dough:

  • Add the milk to a bowl followed by the yeast. Whisk it well.

  • Add the plain flour and tapioca starch. Gently mix and then add the hot water gradually while mixing with a spoon. At this point the dough will start to become sticky. Adjust with more flour or water as needed.

  • Add the salt, butter and yogurt to the bowl and mix until a smooth and elastic texture is obtained.

  • Cover with a tea towel and let it rest for 30 minutes (this will ensure it doubles in size).

Tandoori chicken

Ingredients for the marinade:

  • 400g chicken breast fillet, cut into cubes

  • 3 tbsp yogurt

  • 2 tsp ginger paste

  • 2 garlic cloves

  • 2 tsp ground cumin

  • 2 tsp turmeric

  • 2 tsp cumin seeds

  • 2 tsp garam masala

  • 1 tsp red chilli powder

Mix all of the above ingredients in a bowl and set aside for 30 minutes.

Method:

  1. After having marinated the chicken, add 1 tbsp olive oil to a pan on medium heat.

  2. Toss the chicken in and let it cook until tender. Season with salt to taste.

  3. Once cooked, transfer a portion into a plate and shred the chicken into pieces.

  4. At this point, the dough would have risen. Work it into a ball and then cut into 8 equal parts.

  5. Dust a little bit of flour in your left palm and work the cut part into a ball. Then gently flatten it using your right hand and cup your left palm so that the flattened dough sits in it.

  6. Scoop a bit of the tandoori chicken and add to the cupped part.

  7. Gently fold the dough and dust with some flour to prevent sticking.

  8. Place the roll onto a tray lined with baking paper.

  9. Repeat the above steps for the remaining parts.

  10. Egg wash the roll for shiny texture.

  11. Place the tray in a preheated oven to cook for 20 minutes at 200 degrees Celsius.

  12. Egg wash a second time and let it cook in the oven for another 10 minutes.

  13. Garnish with garlic butter before serving. Enjoy!
