Potato and leek soup

This is my own recipe. It is really easy to make. It takes 15 minutes to prepare and 45 minutes to make. The ingredients I used are:

  • 9 medium peeled potatoes, cut into cubes

  • 300g leek (white and green part), sliced

  • 50g butter

  • 2 tbsp olive oil

  • 1 red onion, diced

  • 2 garlic cloves, chopped

  • 1 tbsp thyme

  • 1 tbsp red chilli powder

  • 1 vegetable stock cube

  • 1 chicken stock cube

  • 600ml water

  • Salt

Method

  1. Add the butter to a saucepan on medium heat. Once it starts melting, add the olive oil.

  2. Toss the onion in and let it cook for 1 minute before adding the garlic, thyme and red chilli powder. Mix well.

  3. Add the potatoes followed by the leek. Put the lid on and let it cook for 15 minutes.

  4. Add the vegetable and chicken stock in, pour the water, season with salt and put the lid back on. Let it cook for 15 minutes.

  5. Transfer to a blender and blitz until smooth.

  6. Pour the soup back into the saucepan and add some water if needed. Let it simmer for 2 more minutes.

  7. Serve a generous portion and garnish with some fried leek and croutons. Enjoy!
