Courgette lasagna
I was inspired by BBC Good Food. It takes 20 minutes to prepare and 1 hour to make. The ingredients I used are:
12 lasagna sheets, cooked
2 courgettes, cut in cubes
1 onion, chopped
3 garlic cloves, finely chopped
400g canned plum tomatoes
200g shredded cheese
2 tomatoes
2 tbsp vegetable oil
1 tbsp tomato purée
Salt
Method:
Add the vegetable oil to a pan on medium heat followed by the onion. Let it cook for 1 minute.
Add the garlic in and let it cook for 5 minutes.
Add the chopped tomatoes and plum tomatoes. Add a splash of water if needed and mix thoroughly. Let it cook for 10 minutes.
Add the tomato purée followed by a splash of water and let it cook for another 10 minutes.
Add the courgettes, season with salt and let it cook for 15 minutes. Remove from heat once cooked.
Place 4 lasagna sheets at the bottom of baking tray. Add the cooked courgettes followed by cheese. Place another 4 sheets on top and repeat until the last 4 sheets are at the top.
Toss the tray in a pre-heated oven at 220 degrees Celsius for 15 minutes.
Serve a generous portion and garnish with fresh herbs. Enjoy!
