Courgette lasagna

I was inspired by BBC Good Food. It takes 20 minutes to prepare and 1 hour to make. The ingredients I used are:

  • 12 lasagna sheets, cooked

  • 2 courgettes, cut in cubes

  • 1 onion, chopped

  • 3 garlic cloves, finely chopped

  • 400g canned plum tomatoes

  • 200g shredded cheese

  • 2 tomatoes

  • 2 tbsp vegetable oil

  • 1 tbsp tomato purée

  • Salt

Method:

  1. Add the vegetable oil to a pan on medium heat followed by the onion. Let it cook for 1 minute.

  2. Add the garlic in and let it cook for 5 minutes.

  3. Add the chopped tomatoes and plum tomatoes. Add a splash of water if needed and mix thoroughly. Let it cook for 10 minutes.

  4. Add the tomato purée followed by a splash of water and let it cook for another 10 minutes.

  5. Add the courgettes, season with salt and let it cook for 15 minutes. Remove from heat once cooked.

  6. Place 4 lasagna sheets at the bottom of baking tray. Add the cooked courgettes followed by cheese. Place another 4 sheets on top and repeat until the last 4 sheets are at the top.

  7. Toss the tray in a pre-heated oven at 220 degrees Celsius for 15 minutes.

  8. Serve a generous portion and garnish with fresh herbs. Enjoy!
