Aubergine curry

This is my own recipe. It is really easy to make. It takes 10 minutes to prepare and 1 hour 10 minutes to make. The ingredients I used are:

  • 1 aubergine, sliced about 1 cm thick then cut in cubes

  • 2 medium potatoes, peeled, boiled and cut in quarters

  • 1 onion, diced

  • 3 garlic cloves, chopped

  • 3 tomatoes, roughly chopped

  • 2 tbsp vegetable oil

  • 1 tbsp tomato purée

  • 1 tsp ginger paste

  • 1 tsp cumin seeds

  • 2 tsp chilli powder

  • 1 tsp garam masala

  • 1 tsp ground turmeric

Method:

  1. Add the vegetable oil to a pan on medium heat followed by the onion. Let it cook for 3 minutes before adding the garlic and then let it cook for 20 minutes.

  2. While the onion is cooking, transfer the aubergine into a large bowl. Season with salt and add 200-300ml water to the bowl and let it soak for 30-45 minutes.

  3. Add the chopped tomato to the onion, season with salt and let it cook for 10 minutes.

  4. Add 100ml water followed by the ginger paste and tomato purée. Mix and let it cook for 5 minutes.

  5. Add another 100ml water and toss the cumin seeds, chilli powder, turmeric and garam masala to the pan. Mix and let it cook for 2 minute before adding the aubergine (drained). Put the lid on and let it cook for 25 minutes.

  6. Add the potatoes in, mix well and let it cook for 5 minutes.

  7. Serve a generous portion and garnish with fresh coriander. It pairs really well with rice. Enjoy!
