Vegetable soup with rice

This is my own recipe. It is really easy and quick to make. It takes 10 minutes to prepare and 35 minutes to cook. The ingredients I used are:

  • 300g rice, cooked

  • 500ml vegetable stock

  • 125g celery sticks, diced

  • 3 medium carrots, diced

  • 1 onion, diced

  • 2 garlic cloves, finely chopped

  • 1tsp ginger

  • 1tsp cumin seeds

  • 1tsp red chilli powder

  • 1 tbsp vegetable oil

  • Salt

  • Coriander

Method:

  1. Add 1 tbsp vegetable oil to a saucepan on medium heat, followed by the onions. Let it cook for 2-3 minutes.

  2. Add the garlic and let it cook for 30 seconds.

  3. Toss the celery in and let it cook for 5 minutes before adding the carrots.

  4. Add 1 tsp ginger paste and mix well. Let it cook for 5 minutes before adding the cumin seeds and red chilli powder.

  5. Pour the vegetable stock in, put the lid on and let it cook for 15 minutes.

  6. Add the rice in, season with salt and let it cook for another 5 minutes.

  7. Serve a generous portion and garnish with coriander. Enjoy!
