Boulettes légumes - Mauritian dumplings

This is my own recipe. It is very easy to make. It takes 20 minutes to prepare and 35 minutes to cook. The ingredients I used are:

  • 500g courgette, grated

  • 3 large carrots, grated

  • 2 tbsp fish sauce

  • 2 tbsp gluten free soy sauce

  • 6-7 tbsp corn starch

  • Handful of fresh spring onion

  • Ground black pepper

  • Salt

Method:

  1. Add the grated courgette to a bowl and sprinkle salt all over. Mix well, cover the bowl with a cloth and let it rest for 10 minutes. This will draw all the moisture out of the vegetable .

  2. Place small portions of the courgette into a kitchen cloth and wring it to remove all the moisture. Transfer the wrung vegetable to a large mixing bowl.

  3. Add the grated carrots, followed by the fish sauce, soy sauce, corn starch, spring onion and pepper.

  4. Mix altogether and roll into small balls.

  5. Place the boulettes in a steamer and let it steam for 15-20 minutes, checking intermittently.

  6. Once cooked, garnish with spring onion and enjoy with a broth or noodles. Bon appétit!
