Bacalhau à Brás
This is my own recipe. It takes 15 minutes to prepare and 40 minutes to cook. The ingredients I used are:
4 big potatoes, peeled and grated
400g skinless and boneless salted fish
1 large onion, sliced
3 garlic cloves, crushed
2 red chillies, finely chopped
2 bay leaves
2 tbsp olive oil
2 tbsp white wine vinegar
4 medium eggs, whisked
1 tbsp red chilli flakes
Handful of fresh spring onion, chopped
Salt
Black ground pepper
Method:
Using cold water, boil the grated potato for about 10-15 minutes until they start to soften. Drain the liquid, rinse with cold water and set aside for later.
Wash the salted fish with cold water then transfer to a saucepan and fill it with water. Add 2 tbsp white wine vinegar, put the lid on and let it boil for 10-15 minutes. Drain the liquid, rinse with cold water and set aside for later.
Add 2 tbsp olive oil to a pan on medium heat, followed by the onions. Let it cook for 5 minutes before adding the garlic, red chillies and bay leaves. Mix well and let it cook for 2 minutes.
Shred the boiled salted fish before adding to the pan and let it fry for 3-5 minutes, with the lid on.
Add the grated potatoes to the pan. Season with salt and pepper, mix well, put the lid on and let it cook for 15 minutes, stirring occasionally.
Toss the eggs in and mix well until it forms a scrambled egg like texture.
Add the red chillies and flakes and spring onion and let it cook for 1-2 minutes before serving. Enjoy!
