Oven baked salmon salad

This is my own recipe. It is really quick and easy to make. It takes 5 minutes to prepare and 20 minutes to cook. The ingredients I used are:

  • 1 salmon fillet

  • 1 carrot, sliced diagonally

  • Handful of spinach, washed and roughly chopped

  • 1 green chilli, chopped

  • 1 red chilli, chopped

  • 1 tbsp olive oil

  • Handful of fresh parsley, chopped

  • 1 small lemon

Method:

  1. Place a sheet of kitchen foil big enough to fit a small baking tray and pour the olive oil in the middle of the sheet to grease the sheet

  2. Add the salmon fillet in the middle of the sheet topped with the red and green chillies and parsley. Cut the lemon in half and squeeze half of it all over the salmon fillet.

  3. Season with salt and drizzle 1 tsp of olive oil all over the salmon. Fold the corners inwards and wrap the salmon fillet

  4. Put the baking tray in a pre-heated oven at 220 degrees Celsius for 20 minutes.

  5. Once the salmon is ready, plate it on top of the spinach and carrot and squeeze the other half of the lemon all over. Enjoy!
