Vegetable soup

This is my own recipe. You only need a few ingredients, and it is really easy to make. It takes 10 minutes to prepare, 35 minutes to cook and 2-3 hours for the soup to cool down before the final step. The ingredients I used are:

  • 1 broccoli, cut into florets

  • 1 carrot, roughly chopped

  • 4 medium potatoes, roughly chopped

  • 1 onion, chopped

  • 1 tbsp vegetable oil

  • 800ml vegetable stock (or water)

  • Handful of grated cheese

  • Salt to season

Method:

  1. Add the vegetable oil to a saucepan on medium heat, and toss the onion in. Let it sauté for 30 seconds.

  2. Add the carrots and potatoes and stir well for 30-40 seconds before adding the broccoli.

  3. Pour the vegetable stock in the pan and season with salt to taste. Mix thoroughly, put the lid on and let it boil for 30-35 minutes until the vegetables are soft.

  4. Once softened, remove the pan from the hob and leave it aside to cool down (2-3 hours).

  5. Transfer the vegetables to a food blender. Add 3-4 tbsp of water if too thick and blitz until smooth.

  6. Transfer the soup to the saucepan on medium heat, and let it cook for 2 minutes, while stirring occasionally.

  7. Serve a generous portion topped with your favourite grated cheese, dried parsley and chilli flakes. Bon appétit!
