Vegetable soup
This is my own recipe. You only need a few ingredients, and it is really easy to make. It takes 10 minutes to prepare, 35 minutes to cook and 2-3 hours for the soup to cool down before the final step. The ingredients I used are:
1 broccoli, cut into florets
1 carrot, roughly chopped
4 medium potatoes, roughly chopped
1 onion, chopped
1 tbsp vegetable oil
800ml vegetable stock (or water)
Handful of grated cheese
Salt to season
Method:
Add the vegetable oil to a saucepan on medium heat, and toss the onion in. Let it sauté for 30 seconds.
Add the carrots and potatoes and stir well for 30-40 seconds before adding the broccoli.
Pour the vegetable stock in the pan and season with salt to taste. Mix thoroughly, put the lid on and let it boil for 30-35 minutes until the vegetables are soft.
Once softened, remove the pan from the hob and leave it aside to cool down (2-3 hours).
Transfer the vegetables to a food blender. Add 3-4 tbsp of water if too thick and blitz until smooth.
Transfer the soup to the saucepan on medium heat, and let it cook for 2 minutes, while stirring occasionally.
Serve a generous portion topped with your favourite grated cheese, dried parsley and chilli flakes. Bon appétit!
