Mauritian sausage and noodle stir-fry
This dish was inspired by my grandma who enjoys cooking sausage and noodle stir-fry. It is a quick and easy recipe.
It takes 5 minutes to prepare and 15-20 minutes to cook. The ingredients I used are:
Soba noodles (you can use any noodle)
Chicken sausage
Capsicum (1 of each colour)
Spring onion
2 tbsp dark soy sauce
Pinch of salt
I started by cutting the capsicum into bite-size pieces, and chopping the spring onion. I added 1 tbsp of vegetable oil in a frying pan on medium heat, and gently dropped the chicken sausage in. I let it cook until it was soft and then removed it from the heat. I cut the cooked chicken sausage into small chunks and set them aside.
Afterwards, I poured some vegetable oil in the frying pan and tossed the capsicum in. While the capsicum was softening, I poured some water in a different pan to boil the noodles. Once the noodles were ready, I drained them and added them to the frying them with the capsicum. I mixed it all, and poured the 2 tbsp of dark soy sauce. After a minute, I dropped the cooked chicken sausage in the mix and added a pinch of salt to taste. I let it cook for 1 more minute and then removed the pan from the heat. Before serving, I sprinkled the chopped spring onion on top. This sausage and noodle stir-fry can be accompanied by hot sauces and even ketchup.
