Lemongrass tofu

I was inspired by Plant based recipe. This dish takes 5 minutes to prepare and 10 minutes to cook.

The ingredients I used are:

  • 350g ready to eat Tofu

  • 1 stalk lemongrass

  • 2 green chillies

  • 1 onion

  • 2 garlic cloves

  • 2 tbsp vegetable oil

  • 3 tbsp oyster sauce

  • 1 tbsp water

  • 1 tbsp soy sauce

  • 1/2 tbsp sugar

  • Half cucumber

  • 1 carrot

  • 1 tomato

I started by dicing the onion, finely chopping the garlic cloves, lemongrass and chillies. I sliced the cucumber and tomato, and cut the carrot lengthways.

I added 2 tbsp of vegetable oil to a frying pan on medium heat and then tossed the onion in. While the onion was cooking, I prepared the sauce by mixing 3 tbsp oyster sauce, 1 tbsp water, 1 tbsp soy sauce and 1/2 tbsp sugar in a small bowl. Once the onion was translucent, I added the garlic cloves followed by the chillies and lemongrass. I stirred it all and let it cook for 1 minute. I lowered the heat and then gently tossed the Tofu in the pan which I cut in cubes beforehand. After 30 seconds, I poured the sauce all over the Tofu in the pan and mixed everything. I let it cook for 30 seconds then removed the pan from the heat.

I served a generous portion with cooked plain rice paired with cucumber, tomato and carrot. Enjoy!
