Bringelle roussi

This is my own recipe. It is really easy and quick to make. It takes 10 minutes to prepare and 10 minutes to cook. The ingredients I used are:

  • 1 aubergine, cut into quarters and boiled for 10 minutes

  • 1 onion, sliced

  • 2 tomatoes, roughly chopped

  • 2 green chillies, chopped

  • 2 garlic cloves, finely chopped

  • 4 curry leaves

  • 1 tsp cumin seeds

  • 1 tsp garam masala

  • 1 tsp red chilli powder

  • 1 tsp ground coriander

  • Salt

  • 2 tbsp vegetable oil

  • Handful of fresh coriander

Method:

  1. Add the vegetable oil to a pan on medium heat followed by the spice mix (curry leaves, cumin seeds, red chilli powder, ground coriander, garam masala). Mix well and let it cook for 1 minute.

  2. Add the onions in, stir well and let it cook for 2 minutes before adding the tomatoes. Season with salt, put the lid on and let it cook for 5 minutes until the tomatoes disintegrate.

  3. Toss the garlic and green chillies in and stir well.

  4. Finally, add the boiled aubergine to the pan, stirring occasionally. Season with salt if needed, put the lid on and let let it cook for 2 minutes.

  5. Serve a generous portion and garnish with coriander. It pairs well with rice. Enjoy!
