I was inspired by Jamie Oliver.

It takes 5 minutes to prepare and 25 minutes to cook. The ingredients I used are:

  • 150g self-raising flour

  • 80ml water

  • 2 vegetarian sausages, cut into small pieces

  • 1 onion, thinly sliced

  • Handful of walnuts

  • Handful of grapes

  • 3 tbsp homemade sundried tomato pesto

  • Goat cheese

  • Rosemary

  • Salt and pepper

Making the base:

  • Add water and a pinch of salt to the flour, and mix.

  • Knead the dough until elastic and smooth.

  • Let it rest for a couple of minutes

The toppings:

  • Add the sausage to a pan on medium heat. Let it cook for a couple of seconds.

  • Drizzle some olive oil all over and let it cook until brown and soft.

  • Add the onions, grapes and walnuts to the pan and stir.

  • Season with salt and pepper and remove the pan from the heat.

The pizza:

  • Roll the dough into a slimmed shape of about 35cm long and 10cm wide.

  • Transfer to a baking tray and spread the pesto all over.

  • Add the cooked toppings, followed by goat cheese and rosemary.

  • Put the tray in a pre-heated oven and let it cook for 20 mins at 180°C. Enjoy!
