Spicy tomato based spaghetti
This is my own recipe. It takes 10 minutes to prepare and 40 minutes to make. All you need is a few simple ingredients. The ingredients I used are:
200g spaghetti
400g plum tomatoes
2 medium onions, thinly diced
3 garlic cloves, thinly chopped
1 tsp ginger paste
1 tbsp tomato purée
2 tsp red chilli powder
2 tbsp vegetable oil
Salt
Handful of fresh parsley
Method:
Add the vegetable oil to a frying pan on low heat followed by the onions. Let it cook for 10-15 minutes stirring occasionally until translucent.
Toss the garlic in and stir and lower the heat if needed to prevent the garlic and onion from burning. Let it cook for 5 minutes.
Add the ginger paste, chilli powder and tomato purée. Mix altogether and toss the plum tomatoes in. Let it cook for 20 minutes, stirring occasionally.
At the same time, start boiling the spaghetti until aldente. Drain but save 200ml pasta water and set aside.
Add a splash of the pasta water to the sauce and mix everything. Toss the spaghetti in, season with salt to taste and mix thoroughly. Let it cook for 1-2 minutes .
Serve a generous portion and garnish with parsley. Bon appétit!
