Honey-glazed noodles with egg
This dish is my own recipe. It is so colourful and rich in flavours. An absolute relish!
It takes 10 minutes to prepare and 25 minutes to cook. The ingredients I used are:
200g vermicelli noodles
2 medium carrots
100g green beans
80g cherry tomatoes
2 garlic cloves
1 red chilli chopped
1 egg
1 spring onion chopped
2 tbsp vegetable oil
2 tbsp dark soy sauce
1 tbsp toasted sesame seeds
I started by halving the green beans, finely cutting the carrots lengthways, and cutting the cherry tomatoes in quarters. I thinly sliced the garlic cloves.
I added the 2 tbsp of vegetable oil to a frying pan on medium heat. I tossed the garlic, green beans and carrots in the pan, and let them cook for 5 minutes. At the same time, I put the egg in a pan with water, and let it boil until the egg hardened. I placed the noodles in another pan with water and let them boil for 5 minutes*.
Once the green beans and carrots softened, I added the cherry tomatoes followed by the red chilli. I stirred it all and seasoned with salt to taste. I then lowered the heat and moved on to prepare the honey sauce. I mixed 2 tbsp of honey with 2 tbsp of dark soy sauce and 1 tbsp toasted sesame seeds in a small bowl to obtain a smooth texture.
Afterwards, I drained the noodles and tossed them to the frying pan with the vegetables. I stirred it altogether, then added 2 tbsp of the sauce all over. I mixed it all again to obtain a consistent honey glazed stir fry. I let it cook for 1 more minute and then removed the pan from the heat.
I then halved the boiled egg after having deshelled it. I served a generous portion of the noodles in a plate, placed the egg on top, and drizzled the honey sauce all over the egg. I then sprinkled some toasted sesame seeds and spring onion. Enjoy!
