Egg Curry
This is my own recipe. It is really easy to make. It takes 20 minutes to prepare and 30 minutes to cook. The ingredients I used are:
4 boiled medium eggs
1 onion, chopped
2 tomatoes, roughly chopped
3 garlic cloves, chopped
2 green chillies, halved
2 tbsp vegetable oil
2 bay leaves
1 tbsp garam masala
1 tbsp cumin seeds
1 tsp red chilli powder
200ml water
Salt
Handful of spring onion
Method:
Add the oil to a pan on medium heat followed by the bay leaves and cumin seeds. Let it cook for 30 seconds.
Toss the onion in and let it cook for 5 minutes before adding the garlic. Mix and let it cook for 30 seconds.
Add the garam masala, chilli powder and green chillies. Mix and let it cook for 2-3 minutes.
Add the tomatoes and let it cook for 5 minutes before adding water. Season with salt and let it cook for 15 minutes.
Once the curry has thickened, add the boiled eggs to the pan and let it cook for 2-3 minutes.
Serve a generous portion and garnish with spring onion. Enjoy with rice. Bon appétit!
