This dish is quick and easy to make. It takes 5 minutes to prepare and 5 minutes to cook. The ingredients I used are:

  • 125g butterflied seabass

  • Handful of spinach and rocket

  • Bunch of fresh coriander

  • 2 red chillies

  • 1 tbsp lemon juice

  • Salt and pepper

The paste:

  • Finely chop the coriander and chillies. Add the lemon juice mix altogether, and season with salt and pepper.

Method:

  • Add 1 tbsp vegetable oil to a pan on medium heat. Add the seabass to the pan, and let it fry until each side is golden and crisp.

  • Garnish each side of the seabass with a generous portion of the paste and serve with greens. Enjoy!
